Gol Gappa’s Origins
When it comes to its origins, it has the roots attached to our ancient India. According to a story from the Mahabharata, Draupadi was given the challenge to feed her hungry husbands with limited ingredients. So, she made puris using leftover dough and served them with a few spices, today what we now know as Gol Gappa!
Since then, variations of this dish have appeared all over India; some are spicy, while others are sweet, but they are all delicious.
Gol Gappa Recipe
Try this simple recipe at home:
Ingredients
For the Puri:
- 1 cup semolina (suji)
- ¼ cup all-purpose flour (maida)
- A pinch of salt
- Water (as needed)
- Oil for frying
For the Spicy Water (Pani):
- 2 cups chilled water
- 2 tbsp tamarind paste
- 1 tsp cumin powder
- 1 tsp chaat masala
- 1 green chili, chopped
- Handful of mint leaves
- Salt to taste
For the Filling:
- 2 boiled potatoes, mashed
- ½ cup boiled chickpeas
- 1 tsp chaat masala
- Tamarind chutney (optional)
How to Put It All Together
- Make the Puri:
- Take a big bowl, and mix the semolina, flour, and salt. To make a firm dough, start kneading the mixture by slowly adding chilled water. Try to use less water as much as you can.
- Let it rest for 20 minutes, then roll it out into small circles puris.
- Om high flame, deep-fry the puris until golden and puffed. Put them aside to cool.
- Prepare the Spicy Water (Pani):
- Take a handful of mint leaves, lots of coriander leaves, tamarind paste, cumin, green chilis, and black salt, put them in a mixy jar, and blend with chilled water to make a fine paste. Later on, add some more water according to flavor.
- Adjust the taste according to your liking and keep it in the refrigerator for half an hour to let the flavors come together.
- Make the Filling:
- Take a bowl, and add mashed potatoes, chopped onion, and chickpeas.
- Add spices like salt, black pepper, coriander powder, chaat masala, and tamarind chutney for extra flavour. Mix it well.
- Assemble the Gol Gappa:
- Now, carefully poke a hole in the puri.
- Fill the mixture into it, and keep it half empty to fill the water.
- After that fill it with spiced water and eat it in one go; Enjoy the burst of flavors!
