Here are the Ingredients:
- 1 liter full-fat milk
- ½ cup condensed milk
- ¼ cup sugar (adjust to taste)
- 10-12 almonds, chopped
- 10-12 pistachios, chopped
- 4-5 strands of saffron (soaked in 2 tablespoons warm milk)
- ½ teaspoon cardamom powder
- Kulfi molds or small cups
Recipe:
- To prepare the base of the Rabdi, take a heavy-bottomed pan, and add milk to it. Bring it to a boil, then reduce the heat to low.
- Let it simmer, and stir it occasionally until it reduces to half its quantity.
- Meanwhile, take 4 tbsp milk & add a pinch of saffron. Keep it aside.
- Do not forget to scrape the sides of the pan to mix the cream back into the milk.
- Do it until the milk becomes thick and remains half of the quantity, once it is done add milk powder to it. Mix it well so no lumps remain.
- For flavor add cardamom seeds, cardamom leaves, and all the chopped nuts like cashews, pistachios, and almonds, & do not forget to add saffron milk. Mix well.
- To make reduced milk sweet, add condensed milk and sugar & mix it well. Let it cook for another 5 minutes.
- Switch off the heat, and let the Rabdi cool completely. The mixture will thicken as it cools.
- Now, pour the mixture into Kulfi molds or small cups. To garnish, you can add a sprinkle of the remaining nuts on top.
- Cover the molds with foil and insert a stick in the center. Let it freeze for 6-8 hours or until completely set.
- Dip the molds in warm water for a few seconds to loosen the Kulfi. Gently remove and serve chilled.
