Badam Kheer: A Sweet Treat for Every Occasion

A very appetizing dish, “Badam Kheer” is adored across India. In India, people usually make it on every occasion and festival to celebrate the moments. It is almost everybody’s favorite and easy to make. To prepare this treat, you have to thicken the milk in the presence of rice and sugar. Here are the Ingredients you need to make Badam Kheer:

  • Milk: 1 liter (full-fat for best results)
  • Almonds (Badam): 1/4 cup (soaked and peeled)
  • Sugar: 1/3 cup (adjust to taste)
  • Cardamom Powder: 1/2 teaspoon
  • Saffron Strands: A pinch (soaked in 2 tablespoons of warm milk)
  • Ghee: 1 teaspoon
  • Chopped Nuts: For garnish (cashews, pistachios, almonds)

Recipe:

  • Firstly, take some water in a saucepan and allow this to boil. Once it boils, soak the almonds in it for 15-20 minutes, or you can also soak them in normal water at night if you are preparing the dish the next day.
  • Peel the skin and grind the almonds into a smooth paste using a little milk.
  • Now, soak some strands of saffron in 2 tbsp of room-temperature milk.
  • Take a heavy-bottomed pan, add milk to it, and bring the milk to a boil.
  • Lower the heat and add soaked saffron to the milk. Mix well and let it simmer for about 15-20 minutes until it reduces slightly. Keep stirring occasionally to avoid burning.
  • Now add the ground almond paste to the milk. Let it boil at least for 5-7 minutes. This will help to thicken the milk and infuse it with almond flavor.
  • Time to add the sugar and mix it well. Bring it to a boil until the sugar dissolves completely.
  • To enhance the flavor, you can add cardamom powder to the kheer. Stir well.
  • For the final touches, heat ghee in a small pan and lightly roast the chopped nuts. Add them to the kheer for a crunchy texture.
  • You can serve it warm or chilled according to your preferences.
